
Start with a chicken breast on a sheet of foil.
Add some sliced tomatoes.

....a little tarragon........

some fresh lime juice.............

olive oil of course......and a little salt and pepper.

Wrap it all up in the foil making little packages and bake at 450 degrees for 20 minutes. Yes, only 20 minutes. It came out tender and soft and really delicious. I found this recipe on page 683 of How To Cook Everything ( red Anniversary Edition) by Mark Bittman.

Made the easy easy chicken tonight. It was great! Since I don't use salt or much olive oil, I decided to flavor it up with roasted peppers, garlic and minced onion. We thought next time we'd try sun-dried tomatoes instead of the peppers. I served it with couscous with raisins, pine nuts, chopped tomato, and a little of the limie juice from the chicken packets. Yum. Thanks so much!!
